I cook because I can. I have always loved the instant gratification of preparing a meal for guests. Cooking is also a perpetual source of learning and growth, and, for a shy person, it is a way to connect. I began humbly as a prep cook for Lisa Dupar and Jonathan Zimmerman, and eventually graduated to some pretty illustrious kitchens, including at The French Laundry and The Herbfarm. But the place that expresses my sensibilities best is Allium Restaurant, which I opened on Orcas Island on May 28, 2010.
I chose to open Allium on Orcas Island, because the opportunity presented itself at the right time. I buy local ingredients not because I want to have a locavore restaurant but because I want to support my neighbors who grow, forage or procure these foods. I stay on Orcas, because I see in an intimate way how my participation makes a difference in a community. When you come to Allium, know that you are having a meal in my home and allowing me the pleasure of cooking for you.
